Easy Crustless Pecan Pie

This will be one of Mom’s contributions to Turkey Day Dinner. She has been making this pecan pie for years, even years before I went gluten-free. She just doesn’t like crust. I don’t know where it originally came from, but this recipe is so easy, and so good.

Easy Crustless Pecan Pie

Ingredients:

1 cup sugar
1 cup light corn syrup
6 eggs
2 Tbs margarine
2 tsp vanilla
1 1/2 cups pecans

Mix all ingredients in pie dish. Bake in a preheated 325 degree oven for 45 minutes.

    Yeah, pecan pie REALLY does NOT need a crust with all that gooey pecan goodness inside! That sounds delicious! I’d add a layer of chocolate chips on the bottom of the pan! MMMMmmmm.. then i’d have to hit the gym for 2 weeks straight! 😉

    There is another reason to like this pie. Note that it has 6 eggs. If you ate 1/6 of it you would eat an entire egg. I don’t eat my deserts after my meal I eat them as part of my meal. In other words, eat this egg and what ever else you want to make a well rounded meal. If my desert has nutrition in it I count it. Lunch might be a piece of pie, an apple and some cottage cheese. I had my pie and the effects weren’t too bad. Just a thought.

    I made this recipe for Thanksgiving. This was my first attempt ever at a pecan pie. When i cut into it the middle was still a liquid. Any advice?

    I used half the sugar and it turned out delicious. I also cooked it 10 minutes longer b. Great recipe.

    I don’t have corn syrup. Can I substitute it with maple syrup? Thank you.

      Hi Sandra! I have never tried it with maple syrup and I’ve never done any baking with it, either, so I can’t give you an accurate answer. I’m sorry. If you do try it, let me know!
