I'm allergic to peanuts. What could I substitute for the peanut butter in this recipe?

I found your blog and started reading through your posts, a lot doesnt work for us because of both our varied intolerances (Gluten, casein, soy, MSG, processed meats, all artificial sweeteners, colourings and preservatives and all forms of cane sugar)and also here in Iceland most of the brands in the states cant be found, no casein free cheese sub, none of those margarines and butter subs and no xanthan gum, guar gum ect. But when I found these I was estatic, only 2 subs that seem easily done and these turned out perfectly.

First sub was the butter I subbed equal parts coconut oil.
Second was the cane sugar, I tried these twice, once subbing with half the amount of fructose and the second with liquid stevia (sorry cant remember how much and it varies between brands).

However and Im not sure if this is because of my subs or not, these did not hold there shape what so ever until they have completely cooled. I attempted to transfer the baking parchment sheet off the cookie tray as soon as I took them out of the oven and they turned into cookie crumbs, second time I let them cool completely and they where perfect.
Thumbs up! :)

Thanks, Melanie. Yes, I am really liking wordpress. I'll put my own picture up there one of these days, once I take one that will fit up top and fit my personality.
I guess it's a cookie day!
