One of These Days…

I will take a course in photography. My pictures need some serious help. Today’s picture is not very exciting, but the food is! I made a chicken alfredo pizza tonight – it is my absolutely favorite kind of pizza. It’s actually very simple (especially since I use the jarred stuff).

I used the crescent roll recipe – Montina style – for the crust. About a third of the flour was Montina today. At least I can say that I got some good fiber from this dinner, lol.

I chose to make things easier on myself (I thought) and roll it in a rectangle and put it on a cookie sheet. Well, the kitchen fates were not kind to me today, and I kept ripping the thing up. Oh, well. It patted in nicely. I baked it at 350° for 15 minutes, then topped it. I used part of a jar of alfredo sauce, chicken (I used Costco rotisserie chicken) that I cut into tiny pieces with scissors, and mozzarella cheese. It spent another 15 minutes basking in the heat of the oven.

For those of you pizza purists, I’m sorry, but I cut it into squares. The kids were hungry, and all. Braden ate 7 pieces – that was even more than me! He said, “I loooove this pizza!” From the mouths of babes…

    First time to visit your site. Great info about GF as you well know! We are new to GF diet after 2 years suffering diarrhea because of pancretitus in Nov 2005 at age 62! Since surgery and recoup, have seen numerous Drs. and taken lots of Rx with no success. Our daughter knew someone who suffers from CD and suggested we try a GF diet for me. Been on it a week and seem to be able to tell a difference already! I have not yet been tested, just trying it on our own for now. Learning something new daily! Since I was on TPN for over 4 mos, unable to even drink water, I wonder if my villi has been damaged. I read that surgery can sometimes trigger CD.
    Cassandra, my question is: My wife baked some bisquets tonight using white rice flour, they tasted OK, but the middle was very WAXY, and sticky! Do you have any idea what would cause this? Thanks for your site, and any help you can give us.

    Welcome, Larry!
    Hmmm about the biscuits. I don’t know if I’ve ever had a waxy middle before (we all have different ways of describing things, and I’m not sure how I would translate that to my personal descriptions). It sounds like they aren’t fully cooked for one. They may have too much xanthan gum if they seem chewy.
    Did you use a gf recipe, or did you just sub in some rice flour in a traditional recipe?

    As for testing, if you are on a gf diet, you will not get positive results for Celiac Disease. I’d be interested to know if your villi showed damage after being on TPN for 4 months. Everybody’s healing time is different.

    I am so excited to find you! I was recently diagnosed with CD. I have Pancretitus also. That was diagnosed when i was 11, 40 years ago!

    I do so miss sourdough bread! ( I am from san francisco and it was wonderful!)
