The Ice Dream Cookbook

I received this new cookbook a few weeks ago, and had hoped to give a thorough review.  Alas, it was not to be, as I have been put on bedrest (but now I have a laptop).  So, even though I have not actually made any of the recipes, I will review the rest of the book.

The Ice Dream Cookbook, by Chef Rachel Albert-Matesz.

If you want a cookbook that calls for pounds and pounds of fat and sugar, then don’t buy this one.  But if you are looking for ways to make your life healthier, or you need to be dairy-free, then this cookbook just might be for you.

Chef Rachel, also know as The Healthy Cooking Coach, has been spending quite a few years perfecting her diet, removing what she feels to be unhealthy for her.  This has led her to be dairy-free (as well as gluten-free).  In doing so, she found some wonderful benefits of coconut, and it is upon coconut milk that the recipes in this cookbook are based.

I like the idea of using coconut milk (and I was really excited to try out the recipes, but that will have to wait now).  People who are allergic to coconut are few and far between compared to dairy or soy.  Since Chef Rachel began writing this book, a few companies have come out with coconut-based ice creams.

A section of the book outlines ingredients: about the ingredient, where to find it, and how to store it.  That is really useful information.  Oftentimes, you purchase some new ingredient and have no idea what to do with it once you get it home.  She also has some really great information about various health issues, and how different foods affect our health.  Highly informative, and a good read, too, including the chapters on techniques and equipment.  I had to buy an ice cream machine, and without her guidance, I would have been lost.

All your basic flavors, with a number of variations are included in the book, but there are also a number of different flavors.  Avocado ice dream?  I think that would score high in Andy’s book.  What about chocolate chip basil ice dream?  Me, I can’t get my eyes of the vanilla brownie ice dream and the cherry vanilla chocolate chunk ice dream (okay, this is really making me hungry).

Cookies, brownies, pie crusts, sauces and compotes are also recipes in this book.  A fresh boysenberry sauce sounds so yummy.

DeBoles Multi Grain Pasta

DeBoles has a new pasta out – a multi grain penne.  I can’t even find the product listed on their website.

To me, it tastes just as good as their rice pastas.  We had it tonight as mac ‘n cheese with hot dogs (Andy’s idea).  It didn’t get mushy, and it held up pretty well to the (freakish) stirring (my cheese was being obstinate).

Look for it in an olive green box.  It clearly has “GLUTEN FREE” on it, just like the rice pastas.

Ingredients: whole grain brown rice flour, white rice flour, rice bran, organic amaranth flour, organic quinoa flour, vitamin & mineral mix (niacin, ferrous sulfate, thiamin mononitrate, riboflavin, folic acid).

Lower Carb Pizza Crust

Which, of course, means I can eat more.

I’ve been making Roben Ryberg’s corn and rice-based pizza crust for over a year now.  I decided to be a little different tonight and make the rice-only version and use brown rice flour.  A carb difference of 10 grams a slice (if sliced into 12 pieces, 15 grams carbs and 5 (or 6-1 fiber), respectively).  Yeah, that means more pizza for me, and/or fruit with dinner (we had pluots tonight).

I really liked the brown rice crust.  I wish I had a pizza stone, then maybe the bottom of the crust would have crisped up a bit.  Mine got a little too damp as it sat, but that had a lot to do with all the peppers I had on it (I used 2/3 of 3 large peppers – green, red, and yellow).  We had to use our forks, but that’s okay.  I’m usually the only one who picks it up like a slice anyways (which is odd, actually).

Next time, I’ll be a little more conservative with the Pam spray.  I was paying more attention to the large knife that Andy kept swinging around while he was talking (he was supposed to be chopping the peppers, lol).  And maybe one day I’ll get a pizza stone…

Better Balance

I must admit – I was reluctant to try these.  I was pretty sure they were going to be gross.

However, I was pleasantly surprised.

Better Balance protein creations are made by Kay’s Naturals.  In their gluten-free line, they have protein chips, Kruncheeze, cereals and pretzels.  They are really good for me to take as a snack because they have a good balance of protein and carbs.

I have tried and really like the chili nacho cheese protein chips and the white cheddar cheese Kruncheeze.

I wasn’t fond of the golden butter twists pretzels.  Perhaps it was the butter flavor, I’m not sure.  Carter was busy pigging out on them and wouldn’t really share anyways.

The cereal, however, has me amazed.  It’s way better in taste and texture than the PerkyO’s, in my opinion.  Each o is light, with airholes (not dense like other gf o cereals), and it has a really good apple cinnamon flavor.  There are 2 other flavors of gf cereal – french vanilla and honey almond.

I suggest you give these a try if you get a chance.

A Pampered Chef Party!

Last week, my friend Nicole threw a Pampered Chef party.  She wanted to make sure that I could be fully involved, so she and her consultant decided to do a 6 O’Clock Salads party.

Prior to the party, Nicole sent me an email with the recipes for the Harvest Chicken Salad and the Bold Southwestern Salad.  I typed up some basic guidelines, then went through each item on the ingredients list and made notes as to brands or specific preparation problems.

There were absolutely no problems at the show.  The consultant went ahead and bought all new bottles of condiments, and if she had any doubts to any of her pieces for show, then she didn’t use them.

We had a wonderful evening and the food was superb!

Recipes Courtesy of Pampered Chef

Harvest Chicken Salad Recipe
Dressing
2 oranges
1/3 cup fat-free mayonnaise
2 tablespoons stone-ground mustard
2 teaspoons  sugar
1/4 teaspoon each salt and ground black pepper
1 small garlic clove, pressed
Salad
1 package (6 ounces) fresh baby spinach leaves
2 cups diced roasted chicken
1 cup diced celery
2 medium Red Delicious apples
1/2 cup chopped red onion
3/4 cup sweetened dried cranberries
1/2 cup toasted pecan halves (optional)
Orange segments
  1. For dressing, zest one orange using Lemon Zester/Scorer to measure 2 teaspoons zest. Juice oranges to measure 1/2 cup juice. Combine orange zest, mayonnaise, mustard, sugar, salt, black pepper and garlic pressed with Garlic Press in Classic Batter Bowl; whisk until smooth using Stainless Whisk. While continuously whisking, add orange juice in a thin, steady stream; set dressing aside.
  2. For salad, place spinach in bottom of large serving bowl. Dice chicken and celery using Utility Knife. Cut apples in half lengthwise; remove stems and seeds using Cook’s Corer®. Cut each apple half into four wedges; crinkle cut wedges into small pieces using Crinkle Cutter. Chop onion using Food Chopper. Layer chicken, celery, apples, onion, cranberries and pecans, if desired, over spinach. To serve, drizzle dressing over salad and toss to coat. Top with orange segments if desired. Serve immediately.
Yield: 12 servings
Nutrients per serving: Light (1 cup salad): Calories 100, Total Fat 2 g, Saturated Fat .5 g, Cholesterol 20 mg, Carbohydrate 13 g, Protein 7 g, Sodium 170 mg, Fiber 2 g
Preparing Orange Segments:
To cut orange into segments, cut a thin slice from the top and the bottom using Utility Knife; stand upright. Cutting from top to bottom, carefully trim away peel and white membrane.

Cut down one side of membrane. Angle knife under segment and lift out. Repeat with remaining segments.

Cook’s Tip: To toast pecans, spread over bottom of Small Oval Baker. Microwave on HIGH 2-3 minutes or until fragrant and lightly toasted, stirring after each 30-second interval.

A 2-pound rotisserie-cooked chicken can be used to prepare this recipe, if desired.  Costco’s is gf.

Southwestern Salad
Ingredients:
Dressing
3/4 cup (175 mL) ranch salad dressing
1 jalapeño pepper, seeded and finely chopped
2 tsp (10 mL) taco seasoning
1 tbsp (15 mL) lime juice
Salad
1/2 cup (125 mL) pitted ripe olives, sliced
1 cup (250 mL) diced red bell pepper
1 pkg (10oz/300g) torn romaine lettuce
1 cup (250 mL) black beans, drained and rinsed
1/2 cup (125 mL) whole kernel corn
2 cups (500 mL) diced cooked chicken
1 ripe avocado, peeled, seeded and diced (optional)

Directions:

  1. For dressing, combine salad dressing, jalapeño pepper, seasoning and lime juice in small bowl; whisk until well blended. Refrigerate until ready to use.
  2. For salad, slice olives and dice bell pepper on Cutting Board. In large serving bowl, combine lettuce, olives, bell pepper, beans, corn and chicken. Pour dressing over salad and toss gently to coat. If desired, top with avocado. Serve immediately.

Yield: 6 servings

Nutrients per serving: Calories 260, Total Fat 16 g, Saturated Fat 3 g, Cholesterol 55 mg, Carbohydrate 15 g, Protein 17 g, Sodium 570 mg, Fiber 4 g

Trader Joe’s Pancake Mix

This morning we made our first batch of Trader Joe’s gluten-free pancakes.  First, I have to say thank you to my Mom and Dad for getting some for me while they were in California.  Thanks!

Trader Joe’s has a pretty big list of gluten-free products.  One of these days, they will pay attention to my emails and put one in Fort Worth.  Until that day comes, I will get their products when I can (which is rarely, and will be even more rare now that Daddy is supposed to stop traveling for work).  TJ’s has a pretty good system going for them and us.  Their gf products are produced by someone else, and packaged for them.  This usually means huge savings for the consumer.  In this case, I believe (but I could be wrong) that the pancake mix is actually made by Namaste.

Besides being gluten-free, the mix is also nut-free and corn-free (and some other things as well).  We found the pancakes to be very good.  I think our favorite still stands with Roben Ryberg’s from You Won’t Believe It’s Gluten-Free, but as far as mixes go, it ranks up there with Pamela’s for us.  I had mine with just peanut butter, to keep my carb counts down as much as possible (and my blood glucose only got to 111 after eating 2 pancakes, so that’s pretty good).  Two with peanut butter was plenty of food for me.

If you have a Trader Joe’s and haven’t tried out some of their stuff, I suggest you do.  We love the licorice scotty dogs and the savory mini rice crackers.  I was hoping to try some of their chocolate products, but it was too hot for my parents to transport that stuff (it was 117 at some point on their drive home).

If you live around Fort Worth, please send an email to Trader Joe’s asking for one in Fort Worth.  Their prices are a whole lot better than Whole Foods, in many cases.

Chicken… For The Soul

Nope, I’m not talking soup.  It’s chicken fried steak for the soul.  Yeah, you heard me.

I’ve been having a rough time lately with food.  It’s kind of odd, because I was doing really well with the whole gestational diabetes diet.  And then something happened.  Really, I’m not sure what – a mix of aching body, severe emotional distress (caused by some wacked-up hormones), monstrous heartburn from anything, and food getting boring.  Yes, boring.  I got so tired of counting carbs and protein and eating snacks and eating the same thing over and over that I sorta… quit eating.

Weigh in Tuesday – I lost 2 pounds in 2 weeks.  I’m supposed to be gaining a pound a week right now, so that’s not exactly the best scenario.  The doctor’s not worried (yet), but if I keep it up he will be.

Andy’s pretty darn worried about me.  I guess it’s kinda hard to watch your spouse crying about every little thing, getting angry, and preferring no food and a soft bed.  I think he checked out my food/blood glucose logs.  He says he doesn’t think my blood sugar levels are high enough most of the time (they have been pretty low lately), and that I’m seriously stressing myself out over the whole thing.  Granted, he’s no doctor or nutritionist, but he is a paramedic who deals with diabetics on a fairly routine level.

So I decided to follow the paramedic’s advice.

Where did that lead me?  Laura’s Bistro – an all gluten-free restaurant and bakery in Plano, TX.  I’ve blogged about Laura’s before.  I had the same thing today.  I’ve actually been craving it – chicken fried steak, onion rings, mashed potatoes, and a caesar salad with croutons.  This time, I threw in one of her homemade oreo-ish cookies (but are sooo much better).  I was so excited to go there, anxiously awaiting my food.  This is why chicken fried steak is good for the soul (at least today).  I needed food to mean something more than that annoying thing I had to stuff down my face 6 times a day.  Now, I am ready to get back into the kitchen and make something.  I am ready to count my carbs and protein, and make something delicious for myself and my family, that I actually want to eat.

What about my blood sugar?  Yes, it did go up – higher than it should have been, but not crazy high (mine never did).  I think Andy’s right; I am stressing out way too much over this.  But, I do still need to pay attention and keep the sugar levels down (but perhaps not as low as they were last week).  I have one more time planned to blow it – that’s my baby shower, lol.

On a more fibrous note, I have been doing really well with drinking my orange sugar-free Metamucil.  I wanted a change of pace, and bought some of the berry kind.  Whoa!  Earth to Metamucil – cut down on the aspartame.  This stuff is sickeningly sweet.  I rarely have aspartame, but made an exception for the Metamucil because this baby requires I eat more fiber, if you know what I mean.  I spent $10 on this container, though, so I can’t just throw it out.

I found that it actually flavors a bowl of yogurt quite nicely (provided you don’t use too much).  It also thickens the yogurt and makes it more like a pudding (kinda cool).  Once I’m back to making smoothies, I’ll probably try sticking some in there, too.  Just remember you need 8 ounces of water with each serving of Metamucil, so drink up while you eat your thickened yogurt.   :)

CD At The Olympics

Are you all excited about the summer Olympics?  We love watching the Olympics.

Did you know that Celiac Disease is being “represented” at the Olympics this year?  Runner Amy Yoder-Begley has Celiac Disease.  She will be competing in the 10,000 meters for the U.S.

Read a bit about her story in the The Journal Gazette from Indiana.  Hopefully this will help raise awareness, too.
