Please Welcome Corice!

I told the doctor I had no intentions of waiting until the 18th to have my baby.  Lo and behold, my water broke early Monday morning.

Corice Nicole Gee was welcomed into this world at 9:27 a.m. on Monday, September 15th.  She weighed 6 pounds, 1.3 ounces, and was 18.5 inches long.  She is a tiny little thing, with dark strawberry hair (though it’s only in the back).

Ah, just a few minutes old.

The c-section went alright.  There were no big problems, but they did have to work pretty hard to get her out.  Unfortunately, that leaves me a little extra tender.

What can I say?  Morphine makes me seriously tired.

Carter had a difficult time while we were in the hospital.  He’s doing much better now that we’re home.  He loves to whisper “Baby Reese” (that’s all he can say of her name for now), and check on her.

Braden’s hand looks insanely huge against Corice, lol.  He is so excited to have a baby sister.

Last night, Braden said “it’s okay if you don’t give me much attention for awhile.  I know that Corice will need all your attention right now.”  What a sweetheart!  That deserved extra hugs, something he couldn’t get enough of yesterday.

Can you tell how huge these clothes are on her?  And they’re preemie-sized!  She only weighed 5 lbs 7 ounces yesterday when we left the hospital.  I think she’s trying to regain those lost 10 ounces all today.  She’s a hungry girl.  :)

As for the hospital and gf, they get credit for trying.  All my oral meds were checked.  I didn’t bother to inform dietary services, because it didn’t work out last time.  This time, though, labor and delivery must have passed on the allergy alert, because my meals were obviouly different than everyone else’s (the pickup cart was near my room, that’s how I know).  But there was gravy (brown) on the meat the first night (though later my meal tickets had the “no gluten” highlighted and someone had written “no gravies”), and breakfasts had cereals with barley malt.  I had brought food from home, so Andy got to eat the boring imitation-gf food.  But it was progress from 2 years ago.

Soup From a Friend

Last Saturday, after our local support group meeting, Dacia came by to bring me some clothes from a friend of hers and some food made by some others in the support group.  It was really nice to have a visitor, and some good food.  Being stuck in bed most of the day is pretty hard, but I’ve only got 7 more days (yippee!).

Betty Barfield, our GIG branch manager, made some chicken soup for me.  I thought it was delicious and asked to share the recipe with you.  This is her recollection of the soup (with her notes).  She doesn’t stick to a recipe, but makes it up as she goes along each time.  Betty also adds cooked quinoa to it sometimes before eating, to give it an even greater nutrition boost.

Chicken Vegetable Soup

4 boneless chicken breasts cooked in 3 cups water (cooked/cubed, save broth)

1-2 cans chicken broth

1 can pinto beans (drained)

1 can black beans (drained)

1 can chopped tomatoes (to make it more Mexican, I sometimes add a can of Rotel too)

1 can peas (drained)

1 ½ C chopped potatoes (I leave skins on)

2 or 3 ears of fresh corn on the cob (corn removed or 1 can drained corn or 1 cup frozen corn)

1 small onion, chopped

1 small bunch scallions, chopped

½ cup chopped celery or 1 tsp dried celery

1 tsp salt (or to taste)

1 tsp pepper

1 T sugar

1-2 T Herbs de Province (I think that’s how you spell it)

½ tsp chopped cilantro (I would have used more, but my husband doesn’t particularly like a lot of it)

A GF Baby Shower!!

I think I had the best baby shower ever on Saturday.  My mom, Melissa (my big sister-in-law), and Nancy (my little SIL) threw a fabulous party for me.

Nancy was in charge of coordinating and decorating and all that fun stuff.  I sure am glad, because she’s the queen!  Pink and brown were the colors for the party, and it was a chic theme (as opposed to a bottles and pacifiers type thing).  Nancy got a whole bunch of pink and brown M&Ms, including some that said “It’s a girl!” and “Corice Nicole” (the baby’s name).  She and Melissa arranged them in various candy dishes and vases (that was a cute idea) throughout the kitchen, dining, and living rooms.

I had made brownies Thursday morning, before heading off to the doctor.  Thank goodness I had, because I got stuck on bedrest as of that afternoon.  A friend offered to come over and make and decorate the cupcakes for me on Friday, but her girls ended up with a fever and she didn’t want to expose me to it.  It’s alright, though, because the brownies were enough (barely – 2 9×13 pans, and only 4 brownies left before the guys showed back up).  In case you would like to try it, I was planning on making yellow and chocolate cupcakes (recipes from You Won’t Believe It’s Gluten-Free), and arranging them in a checkered pattern on a sheet cake board (like you would get from the bakery).  I was going to alternate with pink and chocolate icing, in a fancy swirly pattern, and press them close so it would look sorta like polka dots.  I’ll have to try it for something else in the near future (maybe a Christmas party), as I think it would have been very cute.

Mom and Melissa were in charge of the rest of the food.  I provided a few things (Glutino cream of mushroom soup base, some gf flour, and some xanthan gum), and they set to work.  We had a wonderful table full of fruits, nuts, M&Ms, green chile bake, cheese potatoes, and of course, a tower of brownies.

No baby games for us, just chatting, opening presents, and eating.  It was a wonderful time.

I wanted to share with you a few of the gifts I received.  Nancy got me the cutest handmade diaper bag, with matching changing pad and blanket.

My friend, Aleta, made this quilt for me out of material I had bought five years ago with the intention to make a quilt (for my king-size bed).  I hadn’t touched the material since.  Well, she did this in about a week and a half, and it looks wonderful!

My mother-in-law made this blessing outfit, and my friend, Amanda, made a special blessing bracelet.

Green Chile Bake

10 eggs
4 cups shredded Monterey Jack cheese
2 cups cottage cheese
1/4 cup butter, melted
1/4 cup gf flour mix
1/8 teaspoon xanthan gum
1 teaspoon baking powder
1/2 teaspoon salt
2 4-ounce cans chopped green chiles

Preheat oven to 350° F.  Lightly oil a 9×13 baking dish.  Beat eggs in a large mixing bowl.  Stir in remaining ingredients.  Pour into baking dish and bake for 35 minutes or until the eggs are set.  Cool for 10 minutes.
(Serves 8 to 10 for brunch, 12 to 16 as an appetizer.)

Cheese Potatoes

1 1-lb bag of hashbrowns
1 can gf cream of mushroom soup, condensed (we used Glutino cream of mushroom soup base, and used half the water the directions called for – you have to cook it first, 5 minutes on high, stirring each minute)
1 8-ounce container sour cream
1 stick butter
1 onion – medium
1-2 cups cheddar cheese (or more if you’re like me)

Preheat oven to 350°F.  Chop onion, and place in a microwave-safe bowl with butter.  Microwave on high for 5 minutes (stirring after the first and third minutes) to saute onion.  Mix hashbrowns, cream of mushroom, sour cream, and onion and butter mixture.  Place in 9×13 pan.  Sprinkle cheddar cheese over the top.  Cover with foil.  Bake for 50 minutes.  Remove foil and bake for another 10 minutes.  (You don’t have to put foil on, but if you don’t, instead of melty cheese you will have a cheese “crust” on the top.)

Glutino Candy Bars

These are a lot like a Kit Kat, and essentially a larger (and individually wrapped) version of the wafer cookies.  And we love those wafer cookies.

I was also able to try the dark chocolate version.  I preferred the milk chocolate, but not by much.  I don’t think there’s much more to say about it.  If you miss Kit Kats, then give these a try.

Edited to add: I had a picture of the box on here, but when I switched computers, it ended up being an ad for glutenfree.com.  Very strange.
