Ian’s Gluten-Free Chicken Tenders

Dinner for one can be a hard thing to do.  Luckily, I had a box of Ian’s Gluten-Free Chicken Tenders in the freezer, that they had recently sent me for review.  The box says there are 2 servings, but I don’t believe that (except, perhaps, for little kids).  Braden could eat his way through at least 3 boxes.  I have been told, however, that not all 8 year-olds have a hollow leg.

I think these are a new product – they are not currently listed on the Ian’s website.  They are free of wheat/gluten, casein/milk, eggs, nuts, and soy.
Ingredients:  Chicken: (skinless, boneless no added antibiotics and hormone, chicken breast with rib meat or chicken tenders).  Batter: (water, corn flour, corn starch, ground italian seasoning, garlic powder, salt, baking powder).  Cornflake crumbs: (milled corn, cane sugar, sea salt).  Cooked in canola oil.

When cooked in the oven, the coating attains a nice crispy texture.  In the places where the coating is very thick, the batter is still fairly wet after cooking (towards the chicken, but the outside layer is still crispy).  It’s not unpleasant, though, unless there’s a really really thick spot.  I could have cooked mine a few more minutes, though – that could have made a difference.

The coating actually stays on pretty well.  You don’t end up with chicken in your mouth and crispy coating on your fingers, unless you don’t bite all the way through the chicken (but that would be your fault, not the food’s 🙂 ).

As for the taste – well, that’s pretty good, too.  It has that hint of garlic to give it a little something more than just boring chicken and cornflakes.  It pairs nicely with some honey or barbecue sauce, too.

If you’re in the mood for something quick and easy for yourself or a child, or there’s a hankering for chicken tenders, you might want to give these a try.
