Recently, there has been talk about GFCO products and testing. I’ll have Sara speak more on this later.
One thing I really want to stress, in relation to this and other recent happenings, is that the gluten-free community, especially those in the medical field or bloggers, need to be so much more careful. There has been quite a bit of fear-mongering lately.
Take cow’s milk, for example. Apparently, some bloggers have been saying that cow’s milk contains gluten proteins. Sara, the food scientist, will also be blogging about this later. It is, however, not true. So go ahead and drink your milk if you’re not lactose intolerant or allergic to milk.
As for the GFCO, they have released a statement explaining valid testing procedures. Please read it before passing on possible erroneous information.
