Do you remember those days when you ate spinach or tomato tortillas before going gluten-free? Have you longed for those days?
Well, I am happy to tell you that Rudi’s Gluten-Free Bakery now has flour tortillas. They come in Plain, Fiesta (red bell pepper, jalapeño, onion and garlic), and Spinach! Rudi’s sent me some tortillas to try (I love happy mail days). I needed soft tacos today after the not-so-subliminal misunderstood message from Zumba (I swear one of our songs says “soft taco” over and over).

The spinach tortillas are a pretty green and have a faint garlic flavor. The fiesta tortillas are a light green with a faint veggie flavor. The flavor is mild enough, in either tortilla, that when other ingredients are added, it doesn’t stand out at all.
Martin says they are definitely more flavorful than a standard corn tortilla. He finished his lunch with those and didn’t enjoy it nearly as much.
These tortillas have 5 grams of fiber each, so you don’t have to feel guilty about eating them.

Fav. Organization North Texas Gluten Intollerance Group, my home town in Fort Worth, TX I currently am in the process of creating a Gluten Free Facebook (Mom & Me Glute Free) for me & my teenage son who is also Celiac. It’s our goal to spread the awareness and keep ppl updated on new GF products, along with really great recipes, in hopes it will bring joy to those who are on the GF diet.
Celiac awareness month is very important being that it’s condition/lifestyle that someone must stay true to in order to be healthy. You never know which one if you’re ailments may be due to something you’re eating… Hopefully one day they will develop a rapid method of testing… That way at celiac and gluten free events and venues someone could find out I’ve the spot if they are Celiac…. Dreams if the future O:-)

The Gluten intolerance group is a valuable resource – it was especailly helpful when i first found out that I had a sensitivity to gluten and it was responsible for a lot of my digestive problems.
I think the most important awareness thing to share is that a celiac can’t go “mostly” gluten free. My MIL is constantly trying to get me to take “just a bite” of cake or whatnot and gets offended that I won’t.

We haven’t heard back yet. It will be another week and a half, most likely.
Celiac awareness is great because its so misunderstood, and I love telling people how celiac can have atypical symptoms, and the first dr may not always be right.
When my son was diagnosed at the age of 18 months, the Gluten intolerance group was very helpful.
