Delightfully Gluten Free (TM)

Cranberry Orange Muffins

This morning I had a hankerin’ for muffins. I’d been wanting to try out this Gifts of Nature mix for a few weeks now, and finally got around to it.

The recipe says you can also make cookies with the same batter, so of course, we had to do that. The kids just loved having cookies for breakfast (and lunch, and dinner).

The muffins are not real sweet, which is a good thing for me. Those little flecks you can see are Montina, which is really high in fiber and protein. In fact, one of these muffins has 8% of your daily value of fiber. If you need a comparison, a glass of Metamucil (ick) has about 12%. I had to go downstairs to look that up, and found myself getting a muffin out of the freezer (Andy had put them there, but left the cookies out).

I know we all need to get more fiber into our diets, and I’ve been feeling the squeeze since I’ve been pregnant. This is a wonderful way to do it. These muffins have a good texture and a great flavor.

Now, I have a Gifts of Nature pizza crust calling for me. Perhaps in a couple of days…
