Cheese – the one thing newly diagnosed milk-allergic/lactose intolerant peeps miss most, I hear. Â Pizza if you’re vegan? Â Forget about it, right? Â Not so fast.
I recently received some samples of Vegan
This little tortilla pizza is made with a gluten-free flour tortilla (made with half sorghum flour and half cassava flour – not exactly following the recipe), tomatoes and green chilies (can of Ro-Tel), chicken (leftover from a Costco rotisserie chicken), and Vegan Gourmet Shreds Fiesta Blend.
I stuck this little baby in the oven to broil. Â The shreds held their shape, and didn’t seem to melt. Â They kind of formed a crust because of the broiler. Â However, the shreds under the toppings melted beautifully. Â The Fiesta Blend was just a little spicy and tasted great. Â Unmelted (before going in the oven), it doesn’t quite have the “chew” of cheese, but it doesn’t really taste different.
Martin made himself a few pizzas, too, and used sauce, Shreds, and pepperoni, with the Shreds between the sauce and the pepperoni. Â His seemed to melt just fine and he didn’t even notice anything different than regular cheese. Â I guess that’s the point, right?
