Spaghetti Sauce Chicken

Last night, much to Braden’s chagrin, I decided to cook some chicken breasts in spaghetti sauce. He thought it would just be awful! “That’s just too weird” he said. Well, Mommy had the last laugh – Braden ate 5 helpings!!!!

Spaghetti Sauce Chicken

Boneless skinless chicken breasts (I used 4 half-breasts)
Spaghetti Sauce (I used half a jar)
Mozzarella cheese (let your hips tell you when)

It’s really quite easy. Spread a very light layer of olive oil in a glass baking dish of appropriate size (mine was a 9×13). Cut the extra fat off the chicken and place them in the dish (either whole or cut into strips). Pour the spaghetti sauce over it. I like to use a sauce that has no sugar in it (or substitutes) – just veggies. Top with some mozzarella cheese. Cover with a lid or aluminum foil.

The baking time – this is where my “recipe” becomes inadequate. My oven and I were having another disagreement last night. After having the chicken in the oven for 45 minutes at “350” (notice the quote marks), the chicken was not even remotely beginning to cook (seriously -only the very outermost tiny layer was not pink). So I turned it up to “385” and left it another 20 minutes. If your oven does not dislike you, then you can probably mange to cook this for 30 minutes at 350°.

Next time I make this, I think I will put it in the crockpot and cook it on low most of the day. I think it would be really great shredded.

We served this over brown rice with a salad on the side. A very healthy dinner (and a huge hit!). Enjoy. 🙂

    I love simple stuff like this! It’s quick easy and good! No wonder he had 5 helpings. On your oven, mine did the same thing. I had to buy an oven thermometer and found out my oven was off by 75 degrees! There is a way to calibrate it but I haven’t done that yet. I just keep the thermometer in there and crank it up higher.
    But I’ll bet that recipe would be good in the crock pot though.

    I’ve had my oven checked twice (when it was still under warranty). The first time, they replaced the thermostat part (and something else). The second time, the guy said it was right on – I still don’t believe him.

    I LOVE dinners like this!! I have a chicken marinara bake on my site that is pretty similar to this recipe! THis makes me want to make it again!! Yum-O! I’m so glad that my oven is not the only one that is naughty!! I have to have an oven thermometer too, mine is about 50 degrees too cool! Yeesh! (and it’s brand new!!) Your dinner sounds delicious! Michael would have more than helped himself too! He loves stuff like this and only wishes I would make it more often!

    Just an idea for the chicken – we have often done this and put some shredded parmesan over the chicken breasts, cooked in the oven at 350 until juices run clear – then quickly chop up and put in a dish with the spaghetti sauce. Cook for another 20 minutes to heat the sauce and serve with caesar salad.

    I tried something similar with an extra step or two! I cut the chicken breast into strips & scorched them a little, throw in some onions, bell peppers (all colors) & whatever other vegetable of your liking then pour in casarole dish with spaghetti sauce garlic & more onions, love onions, then stick in oven for about 20/30 min then top with cheese! Oh, don’t forget the spaghetti! Sorry if I made things complicated but first time ever posting! Garnish with some basil & make a killer salad! Enjoy!
